Crunchy Oat Bars

What a time to be alive. We can actually ingest crunchy, filling and sweet treats, without even the hint of an animal product or a highly refined sugar. And who doesn't love a muesli bar?! This recipe is so quick to prepare you could *almost* make it before leaving for work, and it's packed with enough nourishing ingredients, it'll leave you with that glow you only get after seeing a puppy learn to walk down stairs. As usual, substitute the nuts, seeds and dried fruits as desired.

Ingredients
  1. 1 1/2 cups rolled oats
  2. 1 1/2 cups desiccated coconut
  3. 1/2 cup wholemeal self raising flour
  4. 2 tbs chia seeds
  5. 1/3 cup sunflower seeds
  6. 1/2 cup raw mixed nuts, chopped
  7. 1/4 cup goij berries
  8. 1/3 cup crimson raisins
  9. 2/3 cup rice malt syrup
  10. 1/3 - 1/2 cup coconut oil, melted
  11. 2 tbs smooth peanut butter
Instructions
  1. Preheat oven to 180 degrees Celsius and line a rectangular baking tray
  2. In a large bowl, combine all ingredients and mix well
  3. Press mixture evenly into baking tray and place in oven
  4. Bake for 30 minutes or until brown and firm to the touch
  5. Remove from oven, leave to cool, then cut into slices to serve

    Should one be unable to have oils, what could I sub with? Apple sauce? They are to be crunchy, yeah?

      Hi Joan! You could try instead to use water or perhaps applesauce, you just need enough liquid to hold the mixture together but keep it crunchy. Let me know how you go!
