Easy Oat and Pumpkin Cookies

I’m going to keep this short and sweet, not unlike this recipe! You probably have most of these ingredients already at home, so it’s just a matter of combining them in a bowl, shaping them into cookies and throwing them into the oven. Even quicker is the time it’ll take to eat them.

Superfood Seed Cookies

The only thing I value more than devouring Oreos and watching Survivor, is being able to smugly show people how healthy veganism can be. To that end, I have created my Superfood Seed Cookies, which are refined sugar free, dairy free, egg free and packed with so many amazing ingredients you’ll practically glow after just one bite. They aren’t very sweet so feel free to add more dried fruit if you swing that way, or substitute the spices and seeds for whatever you have in your pantry.

Crunchy Oat Bars

What a time to be alive. We can actually ingest crunchy, filling and sweet treats, without even the hint of an animal product or a highly refined sugar. And who doesn’t love a muesli bar?! This recipe is so quick to prepare you could *almost* make it before leaving for work, and it’s packed with enough nourishing ingredients, it’ll leave you with that glow you only get after seeing a puppy learn to walk down stairs. As usual, substitute the nuts, seeds and dried fruits as desired.

Creamy Twix Slice

I don’t think you can ever have too many snacks in the house. What if you have unexpected guests? What if you decide you’re too lazy to make lunch? What if you watch an emotional video of an abused puppy finally finding his forever home? Snacks are a vital part of life, and my Creamy Twix Slice is sweet, rich and healthier than any store bought treats. Made with Medjool dates, gooey peanut butter and crunchy raw nuts, you can be as lazy and well fed as you want.

Healthier Oatmeal and Raisin Cookies

I think Cookie Monster said it best: ‘Today me will live in the moment, unless it’s unpleasant, in which case, me will eat a cookie.’ This recipe is perfect for the vegan looking for a healthy, plant based cookie, that even our friend Cookie Monster would enjoy. Mildly spiced, lightly sweetened and crunchy, my Healthier Oatmeal and Raisin Cookies are a great option for last minute guests or a morning tea treat.

Healthy Vegan Granola

I’ve tried many granolas in my time, but they all seem to be full of sugar, sickly sweet, and heavy on the seeds. I like my granola crunchy, wholesome and healthy, and this recipe is all of those things. It uses a small amount of rice malt syrup and a cup of sultanas for sweetness, but leaves out the refined sugars and juices. Enjoy my Healthy Vegan Granola for breakfast, or be a glutton like me and eat it in between meals as you imagine how magical it must be on the set of Law and Order: SVU. Happy snacking!
