Black Forest Cookies

I love black forest as a...flavour? By that I mean, I love the rich combination of chocolate and cherries, and one of my favourite cake recipes is my Black Forest Cupcakes. Naturally, I had to make a cookie version!

This recipe is very simple and easy to make, and is essentially a crumbly chocolate cookie with a glace cherry on top. It's great for Christmas picnics and events, but is just as tasty all year long.

  • 150g vegan butter        
  • 60g brown sugar        
  • 80g caster sugar        
  • 1 vegan egg, per instructions
  • 20g chocolate, melted
  • 300g plain flour
  • 30g cocoa powder
  • 50g vegan chocolate chips
  • 5-20 glace cherries, cut into quarters (recommended), halves or left in full

Instructions for the cookies

  • Preheat oven to approximately 180 degrees Celsius and set aside a large baking tray.
  • Place butter into the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a handheld mixer at the ready.
  • Beat butter at a medium speed for 30 seconds, then add sugars, egg and chocolate until smooth.
  • Add flour and cocoa and blend until mixture just comes together, then finally add chocolate chips and mix until just combined.
  • Roll mixture into approximately 15-24 balls, or as many or few as you like!
  • Press a piece of cherry into each one (I like using 1/4 per cookie, but you can use more).
  • Bake for approximately 20 minutes, then remove from the oven and leave to cool completely.
  • Store in an airtight container for up to 1 week.
