Healthy Lamington Balls

A raw, vegan, refined sugar free, dairy free and gluten free treat that tastes great and is great for you. It's simple to make and tastes as much like a lamington as a raw food ball could possibly taste!


  • 80g dates
  • 1 cup water
  • 50g cashews
  • 17g shredded coconut
  • 17g coconut flour
  • 30g golden raisins
  • 10g cacao
  • Dessicated coconut, to coat


  • Place dates in a bowl and cover with water and leave to soak for 1/2 hour
  • Remove dates, cut them in half, and soak for another half an hour. Once completed, remove the dates but reserve 3 tbs of the date juice
  • Combine cashews, coconut, raisins and cacao in a food processor until starting to stick together. It's okay to have some chunks in the mixture at this stage
  • Add the dates to the mixture and whilst the motor is running, slowly pour in the date juice until the mixture is sticking together
  • Roll into balls and cover with dessicated coconut
