Spicy Spaghetti Bolognese

Smokey, hearty and spicy, this is the recipe I grab when I'm hangry or craving meat. It's made with healthy ingredients and lots of spices, but you can add more or less depending on your taste. You'll never need meat again!

Ingredients

  • 1 tbs olive oil
  • Salt and pepper, to taste
  • 1 red onion, chopped
  • 2 garlic cloves, minced
  • Fresh rosemary, to taste (I use about a tbs)
  • 1 tsp dried chili, or to taste
  • 1 tsp cumin seeds
  • 2 tsp paprika
  • 2 tbs tomato paste
  • 1 red capsicum, chopped
  • 2 cups sliced mushrooms
  • 2 tbs black sesame seeds
  • 2 x 400g diced tinned tomato
  • 1 x 400g tinned lentils, drained
  • 1 tbs liquid smoke
  • A handful of baby spinach, optional
  • Spaghetti and nutritional yeast or vegan cheese, to serve
     

Instructions

  • In a large frying pan over a medium heat, heat olive oil with seasoning for 30 seconds
  • Add onion and garlic, and cook for a further 5 minutes, until onion starts to become translucent
  • Add rosemary, chili, cumin and paprika, stir and cook for 2 minutes
  • Add tomato paste, stir and cook for a further 30 seconds
  • Add capsicum, mushrooms, sesame seeds, tomato, lentils and liquid smoke, cover pan and leave to simmer for approximately 10 minutes, checking regularly
  • Add spinach and serve on top of spaghetti and top with nutritional yeast
