Apple pie is one of those classic, hearty and comforting desserts that often takes me back to a particular time, place or memory. It's so yummy when served warm with a scoop of ice-cream, and there's not reason vegans have to miss out! My recipe is easy to follow and makes four individual pies or one small share pie, and uses the technique I read about years ago (I wish I remember where!) of microwaving the apple filling prior to cooking the pie in the oven, giving the apple an extra chance to cook through and leaving you with a soft filling and crunchy crust. It's another one of my recipes that also freezes well, so make a batch before a dinner party and reheat in the oven just before your lucky guests arrive!

This is one of my FAVOURITE salad recipes, because it combines all of my must-have elements: it's healthy, crunchy, packed full of flavour and vegan. If you don't have kelp noodles you can substitute them for vermicelli, but I'd highly recommending trying to get your hands on some as they provide such a lovely texture to this crowd-pleaser. Make a big batch and enjoy it throughout the week, and definitely serve it at your next dinner party with some grilled tofu, smashed avocado and sweet potato fries. Yum!

I'll get straight to the point. This is a recipe for the day you come home late from work, starving, not sure what to make and with little time to make it. It uses spices you probably already have, pantry items most vegans always have on hand, and veggies that come fresh or frozen. The beauty of this recipe is that most of the ingredients can spices can be substituted for what you do have (and if you have fresh garlic and ginger, even better!), as long as you stick with the general recipe structure. Perfect for a cozy night in!

I love coming up with decadent, extravagant and indulgent desserts, especially when the results are so fabulous! My Vegan Opera Cake combines a fluffy sponge, a creamy buttercream, a rich coffee syrup and a smooth chocolate ganache. It takes time, concentration and effort, but the results are well worth it. It's looks beautiful as the feature of a high tea, morning tea or party platter, and can be made in advance and frozen until needed. It's a rich and complex cake that will hit all the right spots. 

*Try not to confuse the layers. Your opera cake should be made up of (from top to bottom): croustillant, sponge, coffee syrup, buttercream, sponge, coffee syrup and ganache.
