Bite sized chunks of sugar, crunchy and plant-based goodies, this recipe is a staple for when I need a quick, crowd-pleasing treats. I used vegan Smarties, but unfortunately the only brand I could find locally didn't hold its colour, so they aren't as vibrant as I had hoped. Nonetheless, they're fun, easy to make and really tasty, which make them the perfect party treat!

*And if you know of a great brand of vegan Smarties or M&M's, comment on this post to let me know!

All of the elements can be made in advance and the cake and ganache can be frozen, making it stress-free as well as delightfully delicious!

This dessert is made by combining a soft, sweet date pudding, a creamy vanilla buttercream, crunchy gingerbread snaps and a thick, whiskey infused caramel sauce. It's always exciting to create a recipe that includes vegan pastry, especially when it tastes as good as this one does! Making your own pastry does require a time commitment, but it's absolutely worth it and tastes just as good as the non-vegan versions you used to enjoy. This recipe uses my chocolate croissant pastry, but is filled with a sour raspberry filling and topped with a lemon glaze. I like to make a batch of these and freeze them for when last minute friends come by, or serve them for a lavish morning tea for vegans and non-vegans alike.

My Spirulina and Edamame Green Bowl is packed with all sorts of healthy goodies, and feel free to experiment with additions of your own. If you can't find spirulina noodles, use another type of noodle like vermicelli or udon.

Vegan Apple Pies

Vegan Apple Pies

Apple pie is one of those classic, hearty and comforting desserts that often takes me back to a particular time, place or memory. It's so yummy when served warm with a scoop of ice-cream, and there's not reason vegans have to miss out! My recipe is easy to follow and makes four individual pies or one small share pie, and uses the technique I read about years ago (I wish I remember where!) of microwaving the apple filling prior to cooking the pie in the oven, giving the apple an extra chance to cook through and leaving you with a soft filling and crunchy crust. It's another one of my recipes that also freezes well, so make a batch before a dinner party and reheat in the oven just before your lucky guests arrive!

Chocolate and Cinnamon Babka

Babka always makes a wonderful dessert, morning tea snack or sweet treat for sharing. It's made up of that winning combination of bread and chocolate, which are two of my favourite things, and is so versatile allowing for different types of fillings, spices, and flavours. If you're not planning on serving it for a group, cut it into pieces, place in the freezer and heat when you're ready to enjoy (the chocolate will melt a little too - yum!).

My Crispy Cauliflower Bowls recipe is a wonderful addition to the vegan kitchen, and is a regular in my house because it's made up for some of my favourite ingredients, tastes AMAZING and is an easy to make and healthy dinner option. Cauliflower, sweet potato, edamame and other ingredients made it a great meal for vegans, vegetarians or those of you trying to eat less meat, as it'll leave you feeling satisfied, satiated and full of plant-based goodies that make up a complete, meat-free diet. If you're eating this as a main the recipe makes two full portions, but it can feed a couple more if you've got other dishes, too.

If you're anything like me, you're always looking for new ways to enjoy nature's greatest gift: the sweet potato. It makes such a great base for vegan meals (as well as an excellent side), and this recipe is no exception. All you need are a couple of pantry items, some veggies and of course, sweet potato, to create a healthy, irresistible, plant-based meal. This is one of my FAVOURITE salad recipes, because it combines all of my must-have elements: it's healthy, crunchy, packed full of flavour and vegan. If you don't have kelp noodles you can substitute them for vermicelli, but I'd highly recommending trying to get your hands on some as they provide such a lovely texture to this crowd-pleaser. Make a big batch and enjoy it throughout the week, and definitely serve it at your next dinner party with some grilled tofu, smashed avocado and sweet potato fries. Yum!

Last Minute Vegan Curry

I'll get straight to the point. This is a recipe for the day you come home late from work, starving, not sure what to make and with little time to make it. It uses spices you probably already have, pantry items most vegans always have on hand, and veggies that come fresh or frozen. The beauty of this recipe is that most of the ingredients can spices can be substituted for what you do have (and if you have fresh garlic and ginger, even better!), as long as you stick with the general recipe structure. Perfect for a cozy night in!

Vegan Caesar Salad with Maple Tempeh and Sesame Parmesan

Vegan Caesar Salad with Maple Tempeh and Sesame Parmesan

  • 40 ' Prep. Time

Years ago, Caesar salads were a regular part of my diet. I recall taking a break from my very first casual job and buying a creamy salad and a strawberry milk and devouring the whole thing. I wonder why my teenage skin was so bad?!
My Vegan Caesar Salad has the same creamy dressing, a cheesy parmesan and a crunchy crouton, but made with far healthier ingredients and without any animal products. The parmesan recipe is a personal favourite of mine, and can be added to any salad, pasta or veggie dish. This recipe is a real party pleaser and is a great introduction to tempeh, too!

Tomato and Black Bean Soup

Tomato and Black Bean Soup

Tomato and Black Bean Soup

I'm always inspired to create new soup recipes as the weather gets cooler, but honestly, I could eat this soup all year round. As someone who loves hearty food, I eat soup for two reasons: firstly, to feel warm and full, and secondly, because it provides a solid excuse to eat toast. This ticks both boxes, and is made using delicious black beans, veggies and spices. Make a big batch and store it in the fridge, and have your sourdough ready.

Rice paper rolls are one of my go-to meals when I want something healthy, fresh and light, but at the same time filling and extra tasty. They take a little time and patience to create, but make a fantastic meal for dinner or lunch and are a hit at parties and events. You can use any fillings you have on hand and be as creative as you like, too!

Vegan Opera Cake

Vegan Opera Cake

I love coming up with decadent, extravagant and indulgent desserts, especially when the results are so fabulous! My Vegan Opera Cake combines a fluffy sponge, a creamy buttercream, a rich coffee syrup and a smooth chocolate ganache. It takes time, concentration and effort, but the results are well worth it. It's looks beautiful as the feature of a high tea, morning tea or party platter, and can be made in advance and frozen until needed. It's a rich and complex cake that will hit all the right spots.

*Try not to confuse the layers. Your opera cake should be made up of (from top to bottom): croustillant, sponge, coffee syrup, buttercream, sponge, coffee syrup and ganache.
