Chocolate Banana Bread

This recipe is a delicious alternative to a classic banana bread, using cocoa and coconut to give it extra depth. It's vegan, refined sugar free, and can be eaten the same way as a regular banana bread: fresh or toasted, with or without spread, and in one, guilty sitting. Enjoy!

Ingredients
  1. 1 ¼ cups self-raising flour
  2. 2/3 cup cocoa
  3. 1 tsp baking powder
  4. 1 tsp ground vanilla beans
  5. 2 bananas, mashed
  6. 3/4 cup agave
  7. 1/3 cup melted coconut oil
  8. 1 tsp apple cider vinegar
  9. Shredded coconut, to garnish
Instructions
  1. Preheat oven to 175 degrees Celsius and line a loaf tin
  2. In a large bowl, combine flour, cocoa, baking powder and vanilla beans
  3. In a separate bowl, combine banana,agave, coconut oil and vinegar
  4. Combine wet and dry ingredients
  5. Pour batter into prepared loaf tin and top with coconut
  6. Bake for 30 minutes or until mixture bounces back when pressed
  7. Remove from oven and leave to cool
