Healthier Choc-chip Cookies
Serves 15
Any sentence that combines the words, 'healthier' and 'chocolate chip cookies', is a sentence that should be uttered as much as possible. This recipe makes a lovely, soft cookie that is free of egg and oil, and is low in sugar. As vegans we obviously don't eat cookies with a glass of milk, so why not try with a nice big cup of homemade, soy chai!

Ingredients
  1. 2 cups plain flour
  2. 1/2 tsp baking powder
  3. 1/2 tsp bicarbonate of soda
  4. 1 tbs cornflour
  5. 1 tsp cinnamon
  6. 100g chocolate chips
  7. 150g melted coconut oil
  8. 1/2 cup agave
Instructions
  1. Preheat oven to 175 degrees Celsius and line two cookie trays with baking paper
  2. In a large bowl, combine flour, baking powder, bicarbonate of soda, cornflour and cinnamon
  3. Add chocolate chips and toss to combine
  4. Pour in coconut oil and agave, and mix until just combined
  5. Place spoonfuls of cookie dough into prepared trays and bake for approximately 30 minutes or until nicely browned
  6. Remove from oven and enjoy warm or save for later
